Asian style chicken and cashews over long grain white rice. Chicken, mushrooms, celery, and green onions mixed with mushroom soup, soy sauce. Crockpot Asian chicken is topped with cashews.
Ingredients -
1 (14 ounces) can Bean Sprouts, drained
3 tablespoons Butter, melted
4 Green Onions, chopped
1 (4 ounces) can Mushroom Pieces
1 can Cream of Mushroom Soup
1 cup sliced Celery
1 cup cooked Chicken, cubed
1 tablespoon Soy Sauce
1 cup Unsalted Cashews
Preparation:
1. Add bean sprouts, butter, green onions, mushrooms, cream of mushroom soup, celery, chicken, and soy sauce to crockpot.
2. Cover crockpot and set to LOW and cook 8 hours.
3. Add cashews just before serving.
4. Serve over steamed rice.

Dish can be served with instant rice, but Chinese long grain white rice is the preferred choice. Chinese long grain white rice is available in most supermarkets and the rice of choice for stir-frying.

Cream of Mushroom Soup
Melt 4 tablespoons butter in a large stock pot over medium-high heat. Sauté 1 pound mushrooms and 1/2 thinly sliced onion with salt and pepper until liquid evaporates, 10 minutes. Add 3 cups chicken stock, 1-1/4 cup heavy cream, and 1 tablespoon fresh chopped thyme. Bring to a boil and remove from heat. Puree in batches in food processor and return back to stockpot.
